Baked Fresh Sardines


  • 1 kilo Sardines
  • 45 ml olive oil
  • 2 large onions, finely chopped
  • 45 ml medium dry white wine
  • 225g tomatoes, peeled, seeded and chopped
  • salt & pepper
  • 50g fresh white bread crumbs
  • 25g butter
  • Rocket lettuce to garnish


Grease a shallow oven proof baking dish. Set the over at 180 degrees Celcius.

Heat the oil in a small saucepan, add the onions and fry gentley for about 5 minutes until lightly browned. Add the wine and boil until the volume is reduced by two thirds. Stir the tomatoes, with salt and pepper to taste. Cook for 3 to 4 minutes.

Pour the tomato mixture into the prepared dish, arrange the the sardines on top and sprinkle with breadcrumbs. Dot with the butter and bake for 25 minutes.

Serve hot, garnish with Rocket lettuce.
